Superfood Homemade PB & J

When I want to feel like Wonder Woman, I kickstart the day with one of my favourite breakfasts. One slice of whole grain bread with a table spoon of organic, no sugar added peanut butter, homemade super-food jam, apple slices and a cup of green tea. Total calories: 405. Yum.

Superfood PB & J to start the day

Homemade Superfood Jam

Makes 6 servings, ready in 35 minutes (but only 3 minutes prep time!)
146 calories per serving 

4 cups frozen mixed berries, left out to thaw for 20-25 mins

1/2 chia seeds

1 tbsp organic honey

Once thawed, mash berries with a potato masher until most berries are fully crushed. Add honey and chia seeds and mix together. Let sit for 10-15 minutes before serving.

I recommend getting a small glass reusable container to store excess jam in so that you can enjoy this treat throughout the week. It also tastes great on top of rice cakes and with greek yogurt!

Chia seeds are considered a superfood because they offer a plethora of nutritional properties. An excellent source of omega-3 fatty acid, they also offer plenty of fibre at 10 grams per ounce (about 2 tablespoons), and “contain protein and minerals including as iron, calcium, magnesium and zinc.” – 

By adding these little suckers to your meals you can up your nutritional intake significantly whilst keeping your meals fun and interesting!
